Clams Ularthitathu

Clams - 500 gm
Shallots - 300 gm
Onion - 50 gm
Ginger-garlic
(crushed) - 20 gm
Garam masala - 5 gm
Chilly powder - 10 gm
Coriander powder - 10 gm
Pepper - 8 gm
Turmeric - 3 gm
Curry leaves - 10 gm
Salt - As reqd
Oil - 20 ml
Coconut slices - 30 gm
Tomato - 100 gm
Method
- Boil clams and remove from shell. Clean and keep aside.
- Sauté onions in the oil.
- Add crushed ginger-garlic.
- After sautéing, add all spice powders and sauté well with tomatoes until oil separates.
- Add clams and 1/4 cup of water just enough to cook.
- Stir in coconut slices, enough curry leaves to get typical Kerala taste.
- Close and cook on medium heat until all water evaporates and all masala gets mixed thoroughly.
- Finish it with fresh curry leaves and coconut oil..
