Fresh Mint & Cucumber Raita

SERVES 4-6
- 250g/9oz natural yoghurt
- Half a medium cucumber, peeled, deseeded & grated
- 1cm or 1/2 inch piece ginger root, peeled & grated
- A small handful of mint leaves, finely chopped
- ¼ teaspoon roasted ground cumin
- ¼ teaspoon ground black pepper salt
Method
Whip the yoghurt with a fork until smooth. Combine the whipped yoghurt with the remaining ingredients and chill in the fridge until ready to serve.
